Allergen information.

At Zephoria, our marshmallow (zephyr) products are made with a small number of carefully selected ingredients. Main ingredients include: pasteurized egg whites, sugar, agar-agar (plant-based gelling agent derived from seaweed), fruit juices or purees (such as apple, pineapple, strawberry, and other flavors), vegetable based food colorings.

Our products contain egg, which is a known allergen. All items are prepared in a home kitchen that is not subject to state inspection. While we maintain a clean environment and handle ingredients with care, we cannot guarantee the complete absence of cross-contact with other allergens.

Cottage food notice.

At Zephoria, all products are handcrafted in a home kitchen in Rochester, Minnesota. All products presented on our website are home-produced and not subject to state inspection.

We use pasteurized egg whites in our products. Pasteurization helps eliminate harmful bacteria and makes them safe for use in ready-to-eat foods. During preparation, our recipe includes a sugar syrup that is heated to a high temperature and combined with the egg whites. The finished product is then carefully dried in a controlled environment using a food dehydrator to achieve its signature texture. All products are prepared in accordance with Minnesota cottage food guidelines.

In accordance with Minnesota cottage food laws, our products are not subject to state inspection, appropriate licensing requirements for cottage food exemptions are maintained and available to review by customer on request or upon delivery.

We take great care in maintaining a clean and safe environment and use high-quality ingredients in all of our creations.
